Coconut Curry Chicken

2 lbs boneless skinless chicken breast
1 can coconut milk
2 cups broccoli
1 cup mushrooms
1 onion
1 Tbs. curry powder
1 tsp minced garlic
1 tsp minced ginger
Salt to taste

In a large skillet, add coconut milk, chicken, broccoli, mushrooms and chopped onion. Cook on medium high 15 minutes. Add curry powder, garlic, ginger and salt cook over medium low heat for 15 minutes. Garnish with fresh parsley.
